Rolo Cookie Dough

**SUPER UNHEALTHY ALERT**

I can't lie, this is filled to the brim with sugar but its just so damn tasty, how could I not share it with you? I think it was originally meant to come out like a biscuit bar, with a more shortbread-like texture, but I under cooked it a little, so it came out like cookie dough - amazing.



Ingredients

1 cup of butter (I find butter an absolute pain to mix so I soften it in the microwave)
1.5 cups of light brown sugar
0.5 cup of caster sugar
2 large eggs
2 teaspoons of Vanilla Essence
2.5 cups of plain flour
1 teaspoon of bicarbonate of soda
0.5 teaspoon of baking powder
0.5 teaspoon of salt
2 cups of milk chocolate chips
3-4 packets of rolos

Method

1. Pre-heat your oven to 180 degrees C and grease a square or rectangular baking pan/dish.

2. Cream together the butter, brown sugar and caster sugar until light and fluffy, then beat in the eggs and vanilla essence.

3. Mix in the flour, bicarbonate of soda, baking powder and salt, then add the chocolate chips. Place the mixture in the fridge to chill.

4. Spread half of the dough across the bottom of the baking tray and lay individual rolos across the dough, about a cm apart, so it covers the entire area.



5. Take the rest of the dough and spread it across the top, covering all the rolos.

6. Place the try in the oven and bake for around 30 minutes, until golden brown and a fork comes out clean.

7. Leave to cool for 30-40 minutes and enjoy!
